I am sure most of you have this recipe or something similar but I thought I would post it anyway. This is always my back up meal and my kids never get tired of it.
1 1/2 cup minute rice (uncooked) (you can do whatever amount of rice just match the water)
1 1/2 cup water
chicken breast (3-4) (cook however many you can fit in your pan)
2 cans of any cream soup (I use 1 can of cream of chicken and 1 can of cream of mushroom but again use what you like)
1 packet of onion soup mix
mix water, rice, soups and half of the onion soup mix. Place in 13x9 pan....then put chicken on top and cover chicken and rice with the rest of the onion soup mix. Cover with foil and cook for about 11/2 hours to 2 on 325 for glass pan, or 350 for non glass.
Note.....I find that it usually takes about 2 hours to bake but it depends on each over. Check to make sure chicken is cooked and that water is mostly dissolved and rice is not crunchy.....you really cant ever mess this up!!! I love to serve this with steamed green beans or broccoli.
